Ingredients For chilled pea soup

1/2 Tbspbutter

1/2 Tbspcanola oil

1 cchopped white onions

1/2 cchopped celery
-
1/2 tspground Himalayan pink salt, or to taste

2 lgcloves garlic, pressed

2 1/4 clow-sodium chicken broth
-
3 cfrozen peas
-
1 tspdry thyme leaves (substitute 1 tbsp. fresh)

1/2 tspfreshly ground black pepper (I always use mixed peppercorns), or to taste

1/2 chalf-and-half
-
3 slicebacon, cooked and crumbled for garnish

1 tspfresh chopped chives, for garnish
How To Make chilled pea soup

1In a saucepan over medium heat, add butter and oil. Add onions and celery; season with salt. Sauté for 5 minutes.

2Add garlic and sauté for 1 minute. Add broth, frozen peas, thyme, and pepper. Stir well and bring to a boil. Reduce heat back to medium and simmer for 5 minutes or until peas are tender, stirring occasionally.

3Remove from the heat and allow to cool, about 30 minutes.

4Transfer the mixture to the jar of a blender. Process until smooth; taste and adjust seasoning if needed.

5Pour in a large bowl and add half-and-half; stir to blend.

6Cover and transfer to the fridge for 4 hours or until very chilled. When ready to serve, we’ll garnish with crumbled bacon and chopped chives.
