This recipe is one my stepmom, Barb, made while we were both trying to lose weight in Scotland. Since we both went to Weight Watchers there, I think she got it from one of the other ladies at a meeting. It is so darn good, you won't know it is lower calorie!

Ingredients For cheesy vegetable soup

  • 32 oz
    california blend frozen vegetables
  • 3 sm
    cans fat free chicken broth
  • 1 can
    rotel tomatoes
  • 16 oz
    sliced frozen carrots (or more california blend)
  • 10 oz
    lite velveeta

How To Make cheesy vegetable soup

  • 1
    Simmer frozen vegetables in broth 30 min until tender. It will boil. Remove from heat and add Velveeta cubes. If you don't remove from heat, it will curdle.

    You can increase the vegetables for no extra calories.
