Ingredients For cheesy vegetable soup

    head cauliflower broken into florets
  • 1 md
    onion diced
  • 1 lg
    carrot thinly sliced
  • 4 stalk
    celery sliced
  • 6 clove
    garlic minced
  • 6 c
    water
  • 2 Tbsp
    better than bouillon chicken bouillon
  • 1 stick
    butter
  • 7 Tbsp
    flour
  • 4 c
    milk
  • 2 c
    shredded cheese
  • salt and pepper to taste

How To Make cheesy vegetable soup

    Mix the water and better than bouillon together in large pot. Add the cauliflower florets, carrots, celery, onion, and garlic. Bring to a boil and reduce heat to medium and let simmer 15 minutes.

    Meanwhile melt the butter in a large pan. Whisk in the flour and make a roux. Slowly add the milk and bring to a boil and let thicken. Reduce heat and add the cheese and let the cheese melt.

    Add the cheese mixture to the pot of simmering vegetables. Let simmer 5 more minutes. Taste and season with salt and pepper to taste.
