i have been wanted brocolli soup but didn't think i had the stuff to make it with...well i came up with this and it was really good i thought i had to have milk or cream but sour cream did the trick you can also add any veggies u want/have like carrots or celery or bell peppers or onions... give it a try and hope ya like it as much as i did!!!

Ingredients For cheesey brocolli soup with potato chip topping

  • 2 lb
    bag frozen brocolli
  • 1/2 lb
    smoked sausage or kelbasa
  • 2 c
    water
  • 1 Tbsp
    onion powder,[or 1 med onion chopped fine]
  • 1/2 Tbsp
    garlic powder
  • 1 pinch
    seasoned salt
  • 1 tsp
    fresh ground pepper
  • 8 oz
    light sour cream
  • 4 oz
    mexician grated 4 cheese mix
  • handful broken/crushed potato chips...per bowl

How To Make cheesey brocolli soup with potato chip topping

    put brocolli,water and all spices into med size pot bring to boil over high heat reduce heat and cook til brocolli very tender,bout 20 min

    now put brocolli into food processor or blender..processe til well blender and smooth let sit

    in pan brocolli was cooked add sausage that has been rough cut into med to small pieces cook over med high heat til carmalized turn pan to med low add sour cream and cheese [DO NOT BOIL] cook and stir til cheese is all melted add brocolli mix cook and stir til hot[if u like soup thinner add some cream or milk... i didn't] bout 5 min

    now laddle soup into bowl and add potato chips as garnish and enjoy
