catfish/potato soup

started out as potato soup needed more protien so had catfish..... just what it needed...

Ingredients For catfish/potato soup

  • 5 sm
    potatoes,1/4ed
  • 2 md
    carrots...sliced bout 1/2 wide
  • 1 md
    yellow onion... chopped
  • 1/2 md
    green bell pepper... chopped
  • 2 Tbsp
    dried celery leaves
  • 1 Tbsp
    dried green onions
  • 1/4 lb
    polish kelbasa... diced into 1/4 in pieces
  • 2/3 lb
    catfish nuggets... cut into bit sixe pieces
  • 1 Tbsp
    "old bay spice"
  • 2 c
    milk
  • instant mashed potatoes to taste
  • sour cream, fat-free
  • dried chives

How To Make catfish/potato soup

  • 1
    spray lg fry pan with non stick spray... add kelbasa... cook an fry bout 10 min... remove from pan set aside

    in same fry pan kelbasa was cooked add potatoes cook jus til browned well add next 5 things cook and stir til tender

    now put kelbasa and veggies in med size stock pot add water jus to cover add old bay spice cook for an hour

    add catfish to pan bring to boil lower heat cook and stir bout 10 -15 minutes.. stir gently to not break up fish

    add milk to pan add instant potatoes to thicken as you like heat til hot but do not boil...
  • 6
    divid into 4 lg soup bowls garnish with sour cream an chives...[ i've also used cheese for garnish]
