    butter, cold
  • 1 lb
    carrots
  • 4 pinch
    ground black pepper
  • 3 c
    low-sodium chicken broth
  • 2 c
    coconut milk, unsweetened
  • 3 Tbsp
    sambal oelek
  • 4 dash
    srircha hot chili sauce
  • 2 sprig
    fine chop freash cilantro
  • 3 slice
    white onions

How To Make carrot coconut soup

  • The ingredients

    In a large sauce pan, melt butter, add carrots and onions season with pepper and salt, add coconut milk, bring to boil stir in chicken broth and samkbal oelek. When carrots are tender transfer to blender.. After blending you can re-heat soup, top with sriracha and top with cilantro
  • blending time; please relay on the consistency of the soup. how thin do you want to make it.

    This soup Add more carrots and more broth if serving more then 4 the more coconut milk you add the lighter the soup. and the least amount of coconut milk the darker the soup.
