Ingredients For butternut squash & brie soup

  • 2
    butternut squash, peeled & diced
  • 1 lg
    onion, diced
  • 1 gal
    chicken stock
  • 1/2 tsp
    white pepper
  • 1 lb
    brie cheese, cubed
  • 1/2 gal
    milk

How To Make butternut squash & brie soup

  • 1
    Combine squash, onion and stock and cook until soft and reduced by half. Add cheese and milk, simmer 15-20 min, stirring frequently to reduce the chance of lumps forming. Garnish with slices of red, yellow or green pepper. Serve immediately.
