Ingredients For broccoli & sharp white cheddar soup

1 Tbspbutter

1 mdcarrot small dice

1 mdonion small dice

3 clovegarlic minced

5 Tbspbutter

2 cchicken stock
-
1/4 cflour
-
2 cheavy cream
-
1 cmilk
-
1 lghead sweet baby broccoli cut into florets.

8 ozcabots seriously sharp white cheddar cheese
-
salt and pepper to taste

good quality olive oil for serving
How To Make broccoli & sharp white cheddar soup

1In a saucepan melt the 1 tbsp butter. Saute the onion, carrots, and garlic until softened. set aside. Blanch the broccoli in salted boiling water for 2 minutes then drain set aside.

2In a large pot melt the 5 tbsp butter and whisk in the flour cook 3 minutes. Add the chicken stock and bring to a boil. Slowly add in the milk and heavy cream. Cook until thickened then add in the shredded sharp cheese. Cook until melted. Stir in the onion mixture and broccoli. Cook 2 more minutes. Taste and adjust for salt and pepper. Serve dotted with a little good quality olive oil
