Ingredients For broccoli & sharp white cheddar soup

  • 1 Tbsp
    butter
  • 1 md
    carrot small dice
  • 1 md
    onion small dice
  • 3 clove
    garlic minced
  • 5 Tbsp
    butter
  • 2 c
    chicken stock
  • 1/4 c
    flour
  • 2 c
    heavy cream
  • 1 c
    milk
  • 1 lg
    head sweet baby broccoli cut into florets.
  • 8 oz
    cabots seriously sharp white cheddar cheese
  • salt and pepper to taste
  • good quality olive oil for serving

How To Make broccoli & sharp white cheddar soup

    In a saucepan melt the 1 tbsp butter. Saute the onion, carrots, and garlic until softened. set aside. Blanch the broccoli in salted boiling water for 2 minutes then drain set aside.

    In a large pot melt the 5 tbsp butter and whisk in the flour cook 3 minutes. Add the chicken stock and bring to a boil. Slowly add in the milk and heavy cream. Cook until thickened then add in the shredded sharp cheese. Cook until melted. Stir in the onion mixture and broccoli. Cook 2 more minutes. Taste and adjust for salt and pepper. Serve dotted with a little good quality olive oil
