Ingredients For broccoli/potato soup

  • 12
    red potatoes, small
  • 1 md
    onion, chopped
  • 1 md
    bell pepper, chopped
  • 2 stalk
    celery, chopped
  • 2 clove
    garlic, chopped
  • 2
    carrots, chopped
  • 1 pkg
    chopped broccoli
  • 1 can
    rotel tomatoes
  • 1/2 lg
    velveeta cheese
  • milk

How To Make broccoli/potato soup

  • 1
    Cover potatoes and boil till tender. Add remaining vegetable and simmer 30 minutes. Let cool and process with a food processor. Return to pot. Slice and add the Velveeta cheese and poor milk to consistency of your preference. Seasons of your choice. Top with croutons and Parmesan cheese and enjoy
