Ingredients For broccoli cheese soup

3 cvegetable stock

4 cbroccoli florets, chopped

1 conion, chopped

1/2 tspsalt

1/4 tsppepper

2 clovegarlic, minced

3 ozhalf and half

4 ozcheddar cheese, shredded

1/4 cfresh chopped parsley (optional)
How To Make broccoli cheese soup

1Combine vegetable stock, broccoli, onion, salt, pepper and garlic in a large saucepan. Bring to a boil, reduce heat and simmer until broccoli is tender.

2Turn off heat. Mix soup with hand blender (or pour into a blender) until smooth. Immediately stir in half and half, cheese and parsley, then serve.

3*This isn't a thick cheese soup. The broth is on the thinner side, but absolutely delicious! Very flavorful.
