How To Make barszcz wigiljny (christmas borshch), mark's

1Simmer the vegetables with the peppercorns and salt in water for 30 minutes. Strain. Wash and bake the beets for 1/2 hour in a 350F oven. Peel, grate them coarsely, and add to the broth. Simmer for 5 more minutes. Add lemon juice and season to taste.
