Ingredients For avocado soup

  • 2 md
    ripe avocados
  • 4 sm
    scallions -- chopped
  • 1/2 c
    hatch green chilis -- chopped
  • 1 lg
    fresh jalapeno -- chopped
  • 1 md
    tomato -- chopped
  • 2 c
    chicken broth
  • 1 c
    buttermilk
  • 1 Tbsp
    adobo all purpose mexican seasoning

How To Make avocado soup

  • 1
    Cut avocado into quarters, remove pit and peel, and put the flesh in a blender or processor.
  • 2
    Add remaining ingredients together, half the stock, and puree until smooth.
  • 3
    Combine with remaining stock in a pan.
  • 4
    Simmer the soup while covered for 10 minutes.
