This soup is full of flavor. I got this recipe from my mother in law, she has a wonderful little soup cookbook. We have loved every recipe we have tried.

Ingredients For artichoke lemon soup

4 Tbspolive oil

1 1/2 conion, diced

1 ccelery, diced

4 cvegetable stock

2 cheavy cream
-
1 cwhite wine

2 can(14 oz each) artichoke hearts, drained and chopped

1/4 cfresh lemon juice

1 Tbspfresh parsley, minced

1 tspsalt

1/2 tsppepper
How To Make artichoke lemon soup

1In a large soup pot, heat olive oil over medium heat. Add onion and celery and saute for 10 minutes, stirring occasionally. Add remaining ingredients. Simmer for 30 minutes.
