Ingredients For ann's yummy curry carrot soup

  • 3 lb
    carrots, chopped
  • 1 lg
    onion, chopped
  • 2 Tbsp
    butter
  • 2 clove
    garlic, finely chopped
  • 1 tsp
    curry powder (or more, if you like)
  • 1/2 tsp
    salt
  • dash
    pepper
  • 4 c
    chicken stock (35 fl. oz)
  • 1 can
    coconut milk (400 gm)

How To Make ann's yummy curry carrot soup

    In a large pot cook carrots and onions in the butter over medium heat for 10 minutes.

    Add garlic, curry, salt and pepper. Cook for another minutes or two.
  • 3
    Add stock, cover and bring to the boil. Lower heat and simmer 15 minutes until vegetables are tender.

    Add coconut milk, bring to a low boil, remove from heat.
  • 5
    Cool slightly. Blend in a food processor or use stick blender. Garnish with parsley and croutons.
