Quick and easy, this turkey tortilla soup recipe is a tasty way to use turkey leftovers. It seems like a lot of chilies but trust us... it works and adds so much flavor. Depending on the taco seasoning you use, you may have to add a bit more salt. This simple soup is warm and comforting. Topping with tortilla chips and cheese is yummy.

Ingredients For turkey tortilla soup

1 tspolive oil

1 conions, chopped

1 pkgtaco seasoning mix

6 cchicken broth

2 cturkey, diced

28 ozgreen chile, diced or 4-7 oz cans chopped

16 oztomatoes, diced

10 ozcorn, frozen

1/3 ccilantro, diced

1/2 cMonterey Jack cheese, shredded

1 pkgtortilla chips, enough to top each bowl
How To Make turkey tortilla soup

1In a 5 qt. saucepan, over medium heat, saute onion in oil 3-4 minutes or until soft.

2Stir in chile, cook 1 minute. (If you can get fresh or frozen green chile that is best. If not, use four 7 oz cans of chopped.)

3Add tomatoes.

4Stir in taco seasoning packet.

5Add turkey.

6Add broth.

7Add corn.

8Reduce heat to simmer until soup is hot and bubbly.

9Add cilantro.

10To serve, spoon soup into bowls. Top with tortilla chips and grated cheese.
