This is my favorite way to use left over turkey. I simmer the turkey frame from the Thanksgiving turkey,use the broth and all the meat that falls off the bones plus any leftover turkey from dinner to make the gumbo. After we have sandwiches we're finished with the sliced turkey.

Ingredients For lad's turkey gumbo

2 c chopped onions

1 1/2 c chopped green bell pepper

1 c chopped celery
- SEASONING MIX

2 bay leaves

2 t salt

1/2 t. white pepper

1/2 t. cayenne

1/2 t. black pepper

1/2 t dried thyme leaves

1/4 t. dried oregano leaves

1 tablespoons minced garlic

3/4 c oil

3/4 c flour
-
5 1/2 c turkey or chicken broth

1 lb smoked turkey sausage,cut into 1/2 inch pieces

chopped cooked turkey
How To Make lad's turkey gumbo

1Combine vegetables.Set aside.Combine seasoning mix,set aside.Heat oil until smoking,gradually add flour and cook to make a dark roux.Add half of the vegetables,stir and cook 1 min.Add rest of the vegetables and stir and cook 2 mins.Add seasonings cook 2 mins.Add garlic.cook 1 min.Bring stock to a boil add roux to stock.Bring to a boil add sausage return to a boil 15 min.Reduce heat and simmer 10 mins.Add turkey return to a boil over high heat.Remove from heat and skim any oil from surface. Serve with white rice.
