I had never cooked with barley before this, and this soup quickly changed my mind! It is so good you will make turkey just to make this soup, not just wait for Thanksgiving leftovers!

Ingredients For turkey barley soup

1 1/2 ccarrots, sliced

1 1/2 cmushrooms, sliced

1 ccelery, sliced

1 conion, chopped

2 Tbspoil

9 cturkey broth (i have used chicken broth also)

2 cturkey, cooked and cubed

1/2 cmedium pearl barley
-
2bay leaves
-
1/4 tsppepper
How To Make turkey barley soup

1Saute carrot, mushrooms, celery and onion in oil until tender. Add remaining ingredients, bring to a boil. Reduce heat, cover and simmer 50-60 min or until barley is tender. Remove bay leaves before serving.
