This tasty one-pot dish is quite easy to make. Plus it's a great recipe to use up your leftover turkey meat!

Ingredients For brunswick stew

1 Tbspbutter

1 Tbspcanola oil

1 cyellow onions, diced

1 ccelery, diced

1 ccarrots, quartered and sliced

1 tspground Himalayan pink salt, or to taste

3 lgcloves garlic, pressed

1/2 Tbsphot sauce
-
1 tspCreole seasoning
-
1 tspdried thyme leaves
-
1/2 tspfreshly ground black pepper, or to taste (i always use mixed peppercorns)

1 Tbsptomato paste
-
1 candiced tomatoes (15 oz.)
-
3 cYukon Gold potatoes, scrubbed and cubed
-
4 clow-sodium chicken broth (substitute vegetable broth)

1 lgbay leaf
-
1 cancorn kernels, drained (15 oz)
-
1 canGreat Northern beans, drained and rinsed (540 ml/19 oz.)

4 ccooked turkey, cubed
-
1 TbspWorcestershire sauce
-
1/2 cBBQ sauce
-
1 Tbspbrown sugar
-
1 1/2 Tbspfresh chopped parsley, for garnish
How To Make brunswick stew

1In a Dutch oven over medium heat, add butter and oil. When hot, add mirepoix (onion, celery, and carrots). Season with salt. Sauté for 3 minutes.

2Add garlic, hot sauce, Creole seasoning, thyme, and black pepper; sauté for 1 minute.

3Stir in tomato paste to coat. Add diced tomatoes, potatoes, and broth. Mix well. Add bay leaf and bring the mixture to a boil. Reduce heat to medium and simmer for 10 minutes.

4Add corn, beans, and cooked turkey. Bring to a simmer and cook for another 10 minutes, making sure the potatoes are submerged.

5Add Worcestershire sauce and BBQ sauce. Stir well and cook for 10 minutes or until potatoes are tender.

6If desired, add brown sugar and stir well. If stew still has too much liquid, let it cook for another 5 minutes. Garnish with fresh chopped parsley.
