1leftover carcass from 12 to ? lb turkey

5 qtwater

1 cchopped celery

7chicken bouillon cubes

1/4 tsppepper

1 cpeas
-
1/2 cchopped celery leaves

1 cchopped onion

1 Tbspsalt

1bay leaf
-
1/2 cparsley
-
1 csliced carrots
-
1 ccut green beans

8 oznoodles

1/4 cflour
-
1/4 cbutter
How To Make aunt betty's (after holidays)turkey soup

1In large 8 qt kettle put in carcass, water, celery, leaves, onion, bouillon cubes, salt, pepper, and bay leaf. Heat to boiling; lower heat and simmer for 1 hour.

2Remove carcass and let cool

3Add parsley, peas, carrots and green beans - cook until tender.

4Remove meat from carcass and return meat to broth. Heat to boiling and add noodles. Cook until tender.

5Melt butter in skillet. Add flour and stir over low heat until flour is browned. Stir into boiling soup and simmer for about 5 minutes.
