Ingredients For pumpkin soup with bacon & sour cream

  • 1 md
    onion,peeled chopped
  • 2 md
    carrots, chopped
  • 3 - 4 clove
    garlic,crushed
  • 1/2 pinch
    chilli powder
  • 1 kg
    pumpkin,peeled chopped
  • 4 c
    chicken stock
  • 1 scoop
    fresh parsley
  • 1 c
    sour cream,full-cream
  • 1 c
    bacon,remove fat,cut to small pieces and fryied until red
  • 3 stalk
    fresh green celery,chopped
  • 1 md
    bunch of chives,for garnish

How To Make pumpkin soup with bacon & sour cream

    In a large saucepan heat 2 tablespoons olive oil over medium heat add onion,carrots,celery and cook for 5-8 mins.Add garlic,chilli powder,stir and add pumpkin,parsley and stock.Cover with lid and simmer for 30-40 mins or until the vegetable is soft.

    Take the soup from stove and with hand blender process,make nice smooth and thick soup.Taste and see,if anything nee to be added.Season with salt and freshly ground black pepper.

    Serve the soup into a bowl with dollop of sour cream,fried bacon an croutons.
