Ingredients For minestrone

  • 2 Tbsp
    margarine
  • 3/4 c
    chopped onion
  • 1/4 c
    chopped celery
  • 1/2 c
    grated carrots
  • 1 c
    shredded cabbage or thinly slivered kale
  • 1-14.5 oz. can
    italian style petite diced tomatoes
  • 2 Tbsp
    tomato paste
  • 1 1/2 c
    potatoes, cubed
  • 4 c
    chicken broth
  • 2 clove
    minced garlic
  • 2 tsp
    dried parsley
  • 1 tsp
    salt
  • 1-14.5 oz. can
    navy or cannellini beans
  • 1 c
    elbow or small pasta

How To Make minestrone

  • 1
    Melt margarine in a large pot. Saute onion, celery and carrots for 5 or 10 minutes until vegetables start to soften.
  • 2
    Add the remainder of the ingredients, except the beans and pasta. Bring to a boil, reduce heat, cover and simmer for approximately 1 hour or until vegetables are just tender.

    In a separate pan, cook pasta to al dente according to package direction.
  • 4
    Add beans and pasta to soup and heat just to boiling.
