My mom's Gazpacho recipe is refreshing and perfect for summer time. It tastes fresh and is very delicious. Enjoy!

Ingredients For gazpacho

2 cv-8 juice (we like spicy v-8), divided

2 Tbspolive oil

2 Tbspred wine vinegar

1chicken bouillon cube

1/2 tspgarlic powder

1/2 tspsalt

1/8 tsppepper
-
3 dashhot sauce (optional)

1ripe tomato, peeled and cubed

1 ccucumber, peeled and diced

1/4 cgreen bell pepper, chopped

1/4 conion, sliced
How To Make gazpacho

1In food processor combine 1 cup of V-8 juice and next seven ingredients. Process for a few seconds to mix.

2Add tomato, cucumber, green pepper, and onion. Process until evenly chopped, but do not puree.

3Add remaining cup of V-8. Pour into covered one-quart container, and chill. 4 hours or overnight.

4Garnish with croutons, if desired.
