Ingredients For fireman bob's vegetarian medley my way....

2 Tbspcanola oil

4 Tbspflour

1 lgyellow onion - chopped

1 lggreen bell pepper - chopped

2 stalkcelery - chopped

8 ozmushrooms - your chioce

3 clovegarlic - diced
-
4 cvegetable broth - low salt

1 lgtomatoes with juice - diced

6 ozvegetarian spicy sausge - chopped
-
1 cokra - chopped ( optional )
-
1/2 cred peppers - roasted -chopped
-
1 1/2 tspcajun seasoning - or to taste
-
1 tspfresh cracked black pepper - or to taste

4 lggreen onions - chopped
-
1/4 cfresh parsely - chopped
-
1 bottlehot sauce - for serving ( your choice )

2 tspfennel seeds - roasted
-
2 tspfresh rosemary - chopped
-
1 smpoblano pepper - chopped
How To Make fireman bob's vegetarian medley my way....

1Heat the oil in a Large Dutch Oven, add flour and stir till a rue forms, about 5 minutes Add onions, bell pepper, celery, mushrooms, and garlic and cook stirring until vegetables are softened, about 2 minutes

2Add all remaining ingredients, except for the green onions and parsley, and bring to a boil. Reduce heat and simmer, stirring occasionally, until liquid begins to thicken, then cook an additional 20 minutes. Right at the end, stir in the green onions and parsley.

3Serve with the hot sauce and a Crusty Bread! ENJOY !!!!!
