I started out to make someone else's soup today but found I didn't have all the right ingredients and couldn't go shopping because of the weather--snowed in! So I improvised and came up with a totally different soup which is SO YUMMY! It is so filling you don't really need anything to go with it. Hope you'll give it a try!

Ingredients For ellen's elegant potato-broccoli soup

2 or 3 lgbaking potatoes, peeled and cubed

1 mdonion, chopped

4 ozcream cheese, softened

1 can(10.5 oz.) cream of broccoli soup, undiluted

1/2 cchicken broth
-
8 ozhalf and half
-
1/2 stickbutter
-
1 tspgarlic powder
-
4 slicebacon, cooked and crumbled

4 ozshredded cheddar cheese

salt and pepper to taste
How To Make ellen's elegant potato-broccoli soup

1Cook potatoes and onions in boiling water, covered, for about 10 minutes; drain.

2Add cream cheese and broccoli soup; mix well.

3Stir in 3/4 of the crumbled bacon and 3/4 of the shredded cheese. Add garlic powder, chicken broth, and half and half. Stir until well combined.

4Add the butter, salt and pepper, and cover over low to medium heat until butter has melted.

5Stir again to combine all ingredients; simmer until hot. Serve immediately with the remaining bacon and cheese as garnish.
