I had a nice bunch of fresh organic celery I wanted to put to use and I was thinking about cream of celery soup. The only recipe for it I've ever tried was terrible, so I figured I would wing it and invent my own. Here it is, and it's pretty darn good!

Ingredients For ellen's creamy cream of celery soup

3 Tbspbutter

2 cchopped celery, with a few leaves

1/2 cchopped onion

2 clovegarlic, minced

1 cchicken broth, low salt, low fat

1 cmilk
-
1 csour cream
-
2bay leaves
-
1/4 tspcelery seed
-
salt and pepper to taste

1 tspcornstarch
How To Make ellen's creamy cream of celery soup

1In a large saucepan, melt butter; add onion and celery and cook over medium heat about 10-15 minutes until tender. Add the garlic and cook another minute.

2Stir in the chicken broth, milk, and sour cream; mix thoroughly.

3Add the bay leaves, salt and pepper to taste. Reduce heat and simmer about 15 minutes or until heated through.

4Sprinkle cornstarch into soup and stir until it starts to thicken slightly.

5Serve while hot. Delicious with a crusty bread or crackers. Or sprinkle some seasoned croutons over the soup for extra flavor.
