2beets, scrubbed

1 Tbspbutter

1 Tbspchopped onion

1 Tbspflour

1 pthot white stock

4pepper corns

blade of mace

1 tspsalt

1 pthot milk

1 ccream
How To Make cream of beet soup

1Cook beets without cutting them. When they are tender; drop in cold water 2-3 minutes, then remove skin and rub through strainer. Set aside.

2Cook butter with onions; five minutes. Add flour and when boiling; slowly pour in hot stock; add flour, peppercorns, mace and salt; simmer 10 minutes. Add hot milk, strained beets and cream.
