Ingredients For broccoli chowder with corn & bacon

4 slicebacon, cut into 1-inch pieces

1 mdonion, chopped

1/4 call purpose flour
-
1 qtchicken broth
-
2 mdred potatoes, peeled and diced

1 mdhead broccoli, cut into bite-sized florets, stalks peeled and thinly sliced

1 pkg(10 oz.) frozen corn kernels
-
1/2 tspdried thyme
-
1 cwhole milk
-
salt and pepper to taste
How To Make broccoli chowder with corn & bacon

1In a large pot, cook bacon over mediuim-low, stirring occasionally, until crisp, 8 to 10 minutes. Transfer to a paper-towel-lined plate. Increase heat to medium.

2Cook onion in the same pot until it begins to soften, 6 to 8 minutes.

3Add flour; cook, stirring constantly, for 30 seconds. Add broth and potatoes; bring to a boil. Reduce to a simmer and cook until potatoes are tender, about 10 minutes.

4Add broccoli, corn, thyme, and milk. Cook until broccoli is crisp-tender, 8 to 10 mintes. Season with salt and pepper. Serve topped with bacon.

5NOTE: For a thicker chowder, you may use 1/2 cup whole milk and 1/2 cup heavy cream. Enjoy!
