This is my version of sausage and pepper soup and is completely paleo and good for you!

Ingredients For paleo italian stew

1 lbloose italian sausage

1red bell pepper, diced
-
1green bell pepper, diced
-
1onion, diced
-
2-3 clovegarlic, minced
-
1yellow squash, sliced into 1/4 inch slices

1small zucchini, sliced into 1/4 inch slices
-
2 canitalian style diced tomatoes
-
1 can(small) tomatoe sauce
-
1 Tbspitalian herb seasoning (or 1 tsp each basil, oregano and marjoram)

1 qtchicken stock or broth
-
1 dashsirachi sauce or 1/4 tsp red pepper flakes (optional)
How To Make paleo italian stew

1In a 6 quart pan, brown sausage along with the peppers and onions-(if there is alot of fat you may want to use a folded paper towel in the bottom of the pot to absorb some of it.) add the garlic and the rest of the ingredients, and simmer for about 30 minutes. This will keep in the refrigerator and really is even better the 2nd day.
