This came from a friend in New Orleans. She swore it came from a New Orleans chef (but would never tell us the name!). All I know is that we all tried to get invited over for lunch any weekend she mentioned she was making it!

Ingredients For oyster-artichoke soup

1 cbutter

1/2medium onion, chopped

1/2 cchopped celery

1/2 cminced parsley

1 tspminced garlic

1/8 cflour
-
1 qtoysters (liquid reserved)

1 1/2 canartichoke hearts, drained and chopped

1 cheavy cream
-
1/2 Tbspsalt
-
1 Tbspfreshly ground pepper

1/4 tspcayenne pepper

1 tspdried thyme
-
1 qtchicken stock
How To Make oyster-artichoke soup

1In large pot, melt butter, then sauté onion, celery, parsley and garlic about 5 minutes.

2Add flour and cook 5 more minutes.

3Add oyster liquid, chicken stock, and thyme to mixture and cook 10 minutes.

4Mince oysters and add to pot, along with the cream, salt, pepper and cayenne. Heat and simmer 10 more minutes.
