Ingredients For loaded baked potato soup

  • 2 c
    chicken broth, low salt
  • 2 lb
    baked potatoes cubed
  • 1 1/2 c
    celery ( diced )
  • 1 md
    carrot, shredded
  • 1 Tbsp
    white vinegar
  • 1 c
    milk
  • 1 c
    half and half
  • 1 c
    cheddar cheese, shredded
  • 1 c
    monterey jack cheese shredded
  • 6 slice
    bacon cooked and crumbled
  • 2 Tbsp
    flour

How To Make loaded baked potato soup

  • 1
    Bring first 4 ingredients to a boil in a saucepan over medium-high heat.

    Cover and simmer over medium-low heat for 20 minutes, stirring occasionally.

    Whisk milk/flour mixture into sauce; stir in cheese and bacon.

    Simmer, uncovered, 5-8 minutes, or until thick, stirring constantly.
