I found this in my Mom's recipe collection and tweeked it to our liking. Sometimes I put all fresh ingredients if I have a little more time. I make it with a salad and it is very filling and always requested at home and gatherings. I even make extra to share at work.

Ingredients For lasagna soup

  • 1 lb
    hamburger, pork or italian sausage
  • 1 lg
    onion
  • 2
    green bell peppers
  • 4 clove
    garlic, pressed
  • 64 oz
    chicken broth
  • 2 can
    14.5 oz diced tomatoes
  • 1 can
    15 oz tomatoe sauce
  • 4 Tbsp
    italian seasoning
  • 2 tsp
    kosher salt
  • 1 tsp
    ground black pepper
  • 1 1/2 tsp
    garlic salt
  • 1/4 tsp
    crushed red pepper
  • 1 Tbsp
    dried or fresh basil
  • 8
    pieces of lasagna noodles broken into bite sized pieces
  • 1 c
    parmesan cheese, grated
  • 1 1/2 c
    mozzarella cheese, shredded
  • 1/2 c
    spaghetti sauce

How To Make lasagna soup

    In a large soup pot, brown ground meat of your choice with onion, green pepper and garlic. Add chicken broth, tomatoes, tomato sauce, spaghetti sauce and seasonings. Bring to boil over medium high heat. Boil 2 minutes, then reduce to a simmer and cook for 30 minutes, covered. Stir occasionally.

    Add bite sized lasagna noodles to soup and cook until tender (about 15 minutes).

    When ready to serve, mix in the grated parmesan cheese. Ladle into individual bowls and sprinkle with shredded mozzarella cheese.
