Ingredients For italian wedding soup

  • FOR THE MEATBALLS
  • 1/2 lb
    ground beef
  • 1/2 lb
    ground pork
  • 1/2 c
    bread crumbs
  • 1/4 c
    grated parmesan cheese
  • 1 tsp
    oregano
  • 1 tsp
    basil
  • 1/8 tsp
    garlic powder
  • 2
    eggs, beaten
  • 1 Tbsp
    parsley
  • 1/2 tsp
    onion powder
  • FOR THE SOUP
  • 8 c
    chicken broth
  • 1 1/2 c
    fresh spinach, shredded
  • 1 lg
    carrot, diced
  • 1 c
    uncooked tubettini pasta (or other small pasta)
  • salt and pepper to taste

How To Make italian wedding soup

    For Meatballs:

    Place all ingredients in a bowl and blend well.

    Form into 1/2 inch balls.

    For the Soup:

    Place broth in a large pot. Bring it to a boil.

    Add meatballs and carrots. Reduce heat to medium.Cook for 10 minutes.

    Add salt and pepper to taste.

    Add pasta and spinach and simmer for another 10 minutes or until pasta is done.
