This recipe is very close to what you would get at some of the finest Chinese restaurants!

Ingredients For hot & sour soup

  • 6 c
    chicken broth, low salt,more if needed
  • 1 md
    shallots,minced
  • 4 clove
    garlic,minced
  • 1 lg
    carrot,julienne small pieces
  • 6-8 md
    scallions,sliced thinly on the bias
  • 2 Tbsp
    ginger,grated finely,fresh
  • 2 Tbsp
    sesame oil
  • 2 Tbsp
    sriracha sauce (chinese hot sauce)
  • 2 lg
    eggs,beaten
  • 1/2 c
    corn starch slurry(corn starch with cold water,3 tbsp.corn starch the rest water.
  • 1 lb
    firm organic tofu,cubed
  • 1 lb
    pork,shredded. this can be made a day in advance,season with garlic,salt and pepper,brown on both sides and slow cook for one hour,then shred.
  • 1 Tbsp
    adobo powder
  • 4 oz
    shitake mushrooms,sliced thinly

How To Make hot & sour soup

  • 1
    Start by sauteing the shallots,garlic,carrots,ginger in the sesame oil until tender. Add the shredded pork,adobo powder,tofu,Chinese hot sauce,chicken broth and bring to a boil.

    Slowly whisk in the beaten egg stirring as you add then stir in the corn starch slurry to thicken.

    Ladle into serving bowls and serve with crispy Chinese noodles,sliced scallions and a drizzle of sesame oil. Enjoy!! :)
