I love tomato soup and grilled cheese sandwiches...especially in the winter. Since my friend Eileen gave me this recipe, I no longer buy Campbell's Tomato soup because this is so much better!

Ingredients For homemade tomato bisque (soup)

  • 1 can
    28oz. crushed tomatoes
  • 2
    beef bouillon, cubes
  • 1 Tbsp
    sugar
  • 1
    bay leaf
  • 1/4 tsp
    dried basil
  • 1/4 tsp
    pepper
  • 1 stick
    butter
  • 1/3 c
    flour
  • 4 c
    milk

How To Make homemade tomato bisque (soup)

    Combine first 6 ingredients in large pan. Bring to a boil, then reduce heat and simmer, uncovered for 30 min.

    In another medium pan melt butter and add the flour, blend and cook over medium heat. Stir constantly. Cook until bubbly. Add 4 cups of milk and bring to a simmer stirring constantly. Cook for 2 minutes then add to tomato mixture and blend and heat through. If you prefer this thinner, you could add more milk or a little half & half.

    Serve with grilled cheese sandwiches or crackers. The consistence of this soup is so satisfying and filling.
