north african fish soup
This is a tasty and very easy soup to make. It's especially nice on chilly evenings when a good soup is so nice and comforting. Sometimes I use the potatoes and sometimes not. Personally I really like a lot of liquid to dip good crusty bread into to soak it up. It tastes so good.

Ingredients For north african fish soup

2 Tbspolive oil

1 lgsweet onion, chopped

3celery ribs, diced

3-4garlic cloves, minced

3/4 tsphot paprika or to taste

1/2 tspturmeric

1/2 tspground coriander
-
6 cfish or vegetable broth or stock
-
1 1/2 lbfirm white fish fillets, raw and cut into mouth sized cubes

1 can(15 ounce) diced tomatoes, undrained
-
2 lgpotatoes, peeled and diced small
-
4 - 5saffron threads, crushed
-
1 smbay leaf
-
salt and pepper, to taste

fresh coriander leaves for garnish (optional)
How To Make north african fish soup

1Heat olive oil in a large pot; saute the onions, celery, garlic, paprika, turmeric and coriander until soft and fragrant.

2Add the broth, raw fish, tomatoes, potatoes, saffron and bay leaf.

3Bring to a soft boil; reduce heat and simmer, stirring often, until potatoes are tender and fish flakes (about 15 minutes). The fish should fall into pieces with stirring.

4Remove the bay leaf.

5Add salt and pepper to taste.
