Ingredients For creamy jack mushroom and onion soup

  • 8 c
    beef broth
  • 2 lg
    onions thinly sliced
  • 8 oz
    fresh mushrooms diced
  • 1/2 c
    flour
  • 1/2 c
    water
  • 1 c
    heavy cream
  • 2 c
    shredded monterey jack cheese
  • salt and pepper to taste

How To Make creamy jack mushroom and onion soup

    Add beef broth to large Dutch oven. Bring to a boil. Add onions and reduce to a simmer and simmer on med low for 30 minutes. Add mushrooms and simmer 15 more minutes.

    Mix flour with water and add to soup to thicken. Cook about 5 minutes. Add heavy cream and bring back to a boil. Reduce to simmer and simmer 5 more minutes.

    Add 1 1/2 cup cheese and stir until melted. Add salt and pepper to taste. Serve top with remaining cheese.
