Ingredients For cream of broccoli and cauliflower soup

  • 1-1/2 Tbsp
    olive oil
  • 1 md
    onion, chopped
  • 2
    heads broccoli, chopped
  • 1
    head cauliflower, chopped
  • 2 clove
    garlic, chopped
  • 1 can
    (14.5oz0 chicken broth
  • 2 pkg
    broccoli soup mix (from produce department)
  • 3-4 c
    milk
  • 2 Tbsp
    butter (optional)
  • salt, pepper to taste

How To Make cream of broccoli and cauliflower soup

    Saute onion in olive oil. Add broth, broccoli, cauliflower, and garlic. Lower heat, cover, and cook until tender. Cool slightly.

    Puree in blender in batches usig milk as needed. Pour back into pot.

    Add packets of soup mix, butter, and rest of milk. Adjust thickness of coup to taste with milk. Add butter (optional).

    Cook on low for 20 minutes. Season to taste.
