This is a fabulous quick and easy soup that isn't extremely fattening, yet hearty enough you don't miss the cream.

Ingredients For not your mama's potato soup

  • 4
    yukon gold potatoes
  • 1 1/2 c
    water or broth
  • 5 slice
    bacon, divided
  • 1 slice
    onion chopped
  • 1 can
    cream of chicken soup
  • 1/2 c
    frozen corn
  • 1/2 c
    sliced mushrooms
  • 1/2 c
    fresh or frozen chopped broccoli
  • 2
    hatch chiles
  • 1 c
    cooked chicken, chopped
  • salt and pepper to taste

How To Make not your mama's potato soup

  • 1
    Cut potatoes into bite sized pieces and place in pot with water. Chop one slice of bacon, add to pot along with onion. Bring to a boil, simmer potatoes till tender.

    Add remaining ingredients, simmer for at least 15 minutes. While soup is simmering, fry remaining 4 slices of bacon (or bake in 400 oven) till crispy.

    Chop bacon. Serve soup with grated Mozzarella and bacon. Enjoy.
