Ingredients For vegetable chili

1 Tbspolive oil

1 lgonion, chopped

(1) 28oz cancrushed tomatoes, undrained (i used stewed)

2/3 cpicante sauce

1 1/2 tspchili powder
-
1 1/2 tspground cumin
-
3/4 tspsalt
-
(2)15-16oz canred kidney beans, rinsed and drained

1 lgred bell pepper, chopped
-
1 lgzucchini, cut into 1/2-inch chunks

1yellow squash, cut into 1/2-inch chunks
How To Make vegetable chili

1In a large saucepan or deep skillet,heat oil over medium heat. Sauté onion 2-3 minutes. Add tomatoes,picante sauce,chili powder,cumin and salt. Mix well. Reduce heat to low,cover and simmer 10 minutes. Add remaining ingredients, cover,and simmer an additional 10 minutes,or until vegetables are tender.
