Great for kids who don't like vegetables. Also great for large groups. It's on my top 10 favorite list. Divided into 8 servings, Weight Watcher SP 3.

Ingredients For turkey veggie chili

  • 2
    yellow squash, chopped
  • 2
    zucchini, chopped
  • 2
    yellow peppers, chopped
  • 2
    red peppers, chopped
  • 4
    celery stalks, chopped
  • 1/2
    onion, chopped
  • 1 lb
    ground turkey
  • 1 can
    diced tomatoes
  • 1 can
    kidney beans, rinsed
  • 1
    chili mix packet
  • 1 c
    beef bullion

How To Make turkey veggie chili

    Cook turkey in large pot.
  • 2
    Add veggies and rest of ingredients.
  • 3
    Cover, bring to boil, stir, reduce heat, let simmer on low until all vegetables cook down, about an hour. Don't worry if it looks like there isn't enough liquid, the vegetables will cook down. Resist the urge to add water or broth.
