I was enjoying the aroma and flavor of this chili from the beginning. I couldn't wait for it to be done. And it proved to be worth the wait - what a flavorful chili! It does have some heat, but not too much to scare anyone off. The layering and combinations of flavors in this recipe are delightful.

Ingredients For legion of boom!!!! chili

  • 2 stalk
    celery,diced
  • 1
    green pepper, diced
  • 1
    onion, diced
  • 2 lb
    lean ground beef
  • 1 can
    diced tomatoes and chilies
  • 1 can
    diced green chilies
  • 3 c
    swanson's mexican torilla broth
  • 2 Tbsp
    chili powder
  • 1 tsp
    granulated onion
  • 1 tsp
    granulated garlic
  • 2 tsp
    beef base
  • 1/2 tsp
    cj's spice blend (see recipe in my recipes) or use your favorite all purpose seasoning
  • 1 1/2 Tbsp
    tomato paste
  • 2ND SPICES
  • 2 tsp
    cumin
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    ground red pepper
  • 1 Tbsp
    chili powder
  • pinch
    nutmeg
  • 1 tsp
    sugar
  • FINAL ADDITION
  • 2 can
    favorite beans
  • tabasco sauce as needed for heat
  • 1/4 tsp
    granulated garlic (if desired)
  • 1 tsp
    cumin (if desired)
  • 1-2 tsp
    mild chili powder (if desired)

How To Make legion of boom!!!! chili

  • 1
    Saute celery, green pepper and onion with 1/2 teaspoon CJ's seasoning. Remove veggies to separate bowl and brown ground beef. Drain.

    Combine ground beef, vegetables, tomatoes, broth and spices in large dutch oven and heat until boiling reduce to simmer and cover. Stiring occasionally simmer for about 1 to 1 1/2 hours.

    Add second set of spices and simmer 15 more minutes.
  • 4
    Add 2-3 cans of your favorite beans and add additional spices if necessary. Simmer an additional 15 minutes and serve.
