This 34 ingredient chili recipe is intense, and scaled here as a medium heat chili. I won a chili cook-off contest at Carl Albert State College in Poteau,OK last year in the "hot" division with virtually the same recipe. If you prefere "hot" chili like used in the chili cook-off, just add 1 more teas. of cayenne, 1 more medium jalapeno, and use the hot rotel instead. Be ready to "slap yo momma" after a few spoonfuls of this chili!

2 lbground chuck

1 lbground breakfast sausage

2 lgonions, chopped

1 lggreen bell pepper, cored, seeded & chopped

1 lgred bell pepper, cored, seeded & chopped

2 stalkcelery, chopped

2 Tbspgarlic, minced

3 (15oz.) canrotel (regular)

1 (6oz.) cantomato paste

1 (8oz.) cantomato sauce

8 ozs.water

2beef bouillon cubes

1 canbeer
-
3 Tbspmexene chili powder

1/2 cdried chives
-
2 Tbsplea & perrin worcestershire sauce

2 Tbspgranulated or powdered garlic

2 tspgranulated or powdered onion

2 tsppowdered cayenne pepper

1 tspcajun seasoning ( zatarain's or tony cacherie's)

1 (15oz.) canred kidney beans

1 (15oz.) canblack beans

1 (15oz.) canranch style beans

2 Tbspreal bacon bits (3 strips cooked)

1 Tbspmesa (roasted)

1 Tbspdried oregano

1 tsppaprika (spanish style)

2 tspcumin

4dried bay leaves

2 mdjalapenos (cored, seeded & chopped small)

1 tspdried basil

2 Tbspstrong coffee

How To Make gonzo's big & bold chili

1Put the ground chuck & sausage in a large cooking pot, then add Maxene chili powder, onions, green & red bell peppers, celery, garlic and jalapenos . Cook on medium-low, stirring occasionally until browned.

2Add water, tomato paste, tomato sauce, beer & coffee. Stir, then allow 15 minutes to heat. Stir again, then add the rest of the ingredients.

3Add a lid to the pot, continue to cook on medium low for 1 hour, stirring occasionally. (about every 15 minutes)
