Ingredients For spinach, lentil, chicken ball soup

  • 1 lb
    ground chicken
  • 1/4 c
    panko bread crumbs
  • 1
    egg, slightly beaten
  • 1 tsp
    italian seasoning
  • 1
    carrot, shredded
  • 1
    celery stalk, diced
  • 1 sm
    onion, diced
  • 2 c
    spinach, fresh
  • 4 c
    chicken broth
  • 1 c
    lentils, dry
  • 1 Tbsp
    olive oil
  • 1/2 c
    any small pasta
  • salt/pepper to taste

How To Make spinach, lentil, chicken ball soup

    combine in a bowl ground chicken, panko, egg and Italian seasoning....roll into mini balls, refrigerate while preparing the soup.

    In a large pot, sauté in the olive oil...onions, carrots, celery ( mirepoix) and the lentils...about 5 mins.

    add in the chicken stock, simmer about 20 mins ( mainly for the lentils to soften).

    then add in the rest of the ingredients ( don't forget the chicken balls) keep simmering another 30 mins...
