I've looked for a delicious tortilla soup for years, and this is it! (Adapted from a copy cat recipe from California Pizza Kitchen.) Enjoy!

Ingredients For sedona white chicken tortilla soup

3 Tbspolive oil

2corn tortillas, cut into 1" squares

2 clovegarlic, minced

2 Tbspminced white onion

1 tspminced jalapeno

2 cwhite shoe peg corn

2 cchopped fresh tomatoes (i used pico de gallo)

1/3 ctomato paste
-
1 tspkosher salt
-
1 tsplime juice (fresh)

1/8 tspwhite ground pepper

1/2 tspchili powder
-
4 cfresh chicken stock
-
1/2 csharp cheddar cheese
-
5 Tbspsour cream
-
1/2 cchopped cilantro
-
1 ccooked chicken, shredded
How To Make sedona white chicken tortilla soup

1Fry tortilla squares in oil, and add garlic, onion and jalapeno. Cook until onion is clear. Add corn, tomatoes, tomato paste, spices, and chicken stock. Bring to simmer, and cook for 5 minutes.

2Remove from heat and use an emulsion blender to blend all together.

3Put shredded chicken in bowl, and add soup and garnishes on top.

4Garnish with cheddar, sour cream, cilantro, and tortilla chips if desired.
