Ingredients For italian wedding soup

  • 1/2 lb
    lean ground beef
  • 1/2 c
    fresh bread crumbs (1 slice)
  • 1
    egg slightly beaten
  • 1 Tbsp
    finely chopped onion
  • 5 tsp
    chicken flavor instant bouillon
  • 8 c
    water
  • 1/2 c
    acini de pepe or small soup pasta
  • 1 1/2 c
    cut up fresh spinach leaves
  • grated parmesan cheese, optional

How To Make italian wedding soup

  • 1
    In a small bowl, mix meat, crumbs, eggs, onion and 1 teaspoon bouillon. Shape into 40 small meatballs.

    In a large kettle or dutch oven, bring water and remaining 4 teaspoons bouillon to a boil. Add meatballs and pasta; cook 10 minutes.

    Add spinach; simmer 3 to 5 minutes or until tender. Serve with cheese if desired. Refrigerate leftovers.
