With a cold rain this weekend AND company coming I felt this "soup" would be fitting. And I was correct...it was devoured! It was so hearty and satisfying! This recipe makes enough that 8 adults had seconds! I had my bruschetta bites and this soup. A perfect start to the Easter weekend!

Slow Cooker Crock Pot
Ingredients For hearty italian zuppa!

2 Tbspolive oil, extra virgin
-
1 lgonion, diced
-
1 lbsweet italian sausage, scrambled
-
1 lbroasted chicken breast, pulled meat, homemade or bought
-
2 lgcans diced tomatoes, with basil, oregano
-
5 cchicken stock
-
2 cwater
-
3 can14oz cannellini beans
-
2 tspsalt and pepper
-
2 tspitalian spices
-
1 Tbspsugar
-
1 tspbasil dried
-
1 bunchfresh spinach, roughly chopped, stems removed
-
4-5fresh basil leaves
-
grated parmesan cheese for garnish and thickening if desired
How To Make hearty italian zuppa!

1In a large stock pot add olive oil and saute onion until translucent. Add a pinch of salt.

2Scramble sweet sausage in until cooked.

3Add tomatoes, chicken stock, water, spices, beans, sugar, fresh spinach, and fresh basil.

4Transfer to crock pot and cook on high for 1 hour then low for another hour. Or if you prefer to keep it in the stock pot cook it for 2 hours on low simmer.

5Garnish with parmesan cheese, and chopped fresh basil.
Salt and pepper to taste.
