This is a simple and easy soup to prepare. Great when trying to eat light or a nice appetizer soup. Also great when not feeling well, and a hot bowl of brothy soup is all you want. This recipe came from a pamphlet style cookbook titled "Chinese Cookery" 1973

Ingredients For egg drop soup

1/2 tspwater

3 cchicken broth
-
pinchof sugar

1/4 tspsalt

1/8 tspsesame oil

1 smscallion, minced

2 tspfinely chopped chives
How To Make egg drop soup

1In a small bowl, beat the egg with the water.

2Bring chicken broth to a simmer and add the sugar, salt and sesame oil.

3Stirring constantly, add the egg to the simmering broth. As you stir, the egg will form strings.

4Stir in the scallion and remove from the heat. Serve in individual bowls and garnish with chives.
