This is a long time family favorite based on the famous minestrone soup served at a local restaurant. Delicious served with fresh Italian bread!

Ingredients For venus de milo (minestrone) soup

  • 1 lb
    ground beef
  • 1 Tbsp
    olive oil, extra virgin
  • 1 pkg
    dry onion soup mix
  • 2 can
    chicken broth
  • 2 can
    veg all (mixed vegetables)
  • 2 can
    tomatoes, canned italian-style and diced
  • 1/4 c
    orzo pasta, uncooked
  • parmesan cheese

How To Make venus de milo (minestrone) soup

    In a large soup pot brown ground beef in olive oil, breaking up into small pieces.

    Add onion soup mix and mix well.
  • 3
    Add all canned ingredients, including the liquids, and bring to a boil.
  • 4
    Add orzo and reduce heat. Simmer for 20 minutes (until orzo is cooked through).

    Serve with grated parmesan cheese.
