Being that we're having a few chilly, rainy days...I thought it would be a good day to clean out my pantry, had lots of beans, chiles and tomatoes, so this is what I threw together...and to hear the family tell it...I did good...lol! We like heat, and with the cayenne it packs just the right amount for us...adjust the heat according to your preference...it sure is mighty tasty!!! Enjoy!

Ingredients For super tasty taco soup - cassies

  • 1 lb
    ground beef
  • 1
    onion, chopped
  • 3 clove
    garlic, minced
  • 1 sm
    red bell pepper, chopped - optional
  • 1 1/2 c
    water
  • 1 or 2 - 4 oz
    cans, green chiles
  • 10 oz
    frozen corn
  • 1 - 14 oz
    stewed tomatoes
  • 1 - 10 oz
    rotel - dicd tomato & chiles
  • 1 - 15.5 oz
    mild chili beans
  • 1 - 15.5 oz
    dark red kidney beans - rinsed
  • 1 - 19.75 oz
    black beans, partially drained
  • 1 - 1.25 oz
    taco seasoning mix
  • 1 - 1.0 oz
    ranch dressing @ seasoning mix
  • 1 1/2 tsp
    sugar
  • 1 tsp
    onion powder
  • 1/2 tsp
    each - cumin & chili powder
  • 3/4 tsp
    cayenne pepper/ optional - if you like spicy, add it
  • salt
    to taste
  • condiments
    such as corn chips, sour cream, mexican cheese blend, green onion

How To Make super tasty taco soup - cassies

    In my 3 quart dutch oven; In about 1 tablespoon of olive oil, brown the ground beef with onions and red bell pepper until beef is no longer pink and veggies are soft. Stir in garlic and remain browning another minute or two.

    Add all remaining ingredients; stir well to blend. Bring to a slow boil, then turn heat to simmer, and cook for an hour, stirring frequently so as not to burn.

    When finish, serve up with your favorite condiments...it's so good!
