smoked sausage and kale soup
My daughter cooks with kale all the time. I thought I would try it when I saw that the grocery store had it on sale. So I made this soup. It turned out so good, especially the next day. I will be cooking with it more often.

2 Tbspolive oil, light

2 cseasoning vegetables blend, onions, celery and peppers

3 clovegarlic, chopped

1/8 tspred pepper flakes

3 cchicken broth, low salt

2 cwater
-
1bay leaf
-
2 Tbspworcestershire sauce
-
1 canchick peas
-
1parmesan cheese rind.

2 cfresh kale, chopped or torn into bite size pieces

1 lbsmoked sausage,sliced

1 Tbspsoy sauce
-
1/2 tsporegano, dried
How To Make smoked sausage and kale soup

1In a large pot or dutch oven, brown sausage in olive oil. Remove and set aside. Add the vegetable seasoning blend, salt , pepper and cook until soft. Add garlic and red pepper flakes to cook for a minute more.

2Pour in chicken stock and water. Add bay leaf, chick peas, Parmesan rind, and Worcestershire. Bring to a boil cover and reduce heat. Simmer for 50 minutes.

3Remove Parmesan rind. Stir in kale, add sausage, oregano and soy sauce. Continue simmering for additional 15 minute. Taste to add salt and pepper.
